An oldie but goodie! My got to breakfast meal prep is always the frittata. Whether it’s cooked in an iron skillet or glass dish it never ceases to be the easiest and tastiest breakfast prep I’ve come across.
Like I said I’ve changed up the baking dish on this old recipe as well as added in some bacon because who doesn’t love bacon 🥓 be sure to put your own twist in this dish with your favorite ingredients!
Bacon, spinach, pepper and onion egg frittata
1-16oz Carton Eggs Whites
4 slices Thick Cut Bacon
1 Red Pepper
1 Cup Spinach
Pinch of Salt & Pepper
1.) Preheat oven 375.
2.) Cut up bacon, pepper and onions and sauté on medium heat in iron skillet or oven safe pan until the onions become translucent and veggies begin to brown.
3.) In a bowl, whisk eggs and egg whites then add cut up spinach and place in a greased baking dish or skillet.
5.) Place skillet in the oven for 20-30 minutes or until eggs are cooked all the way through.
6.) Let cool and pack in your meal prep containers for a delicious breakfast throughout the week.
