Chocolate Almond Butter Date Bites
Quarantine baking has been in full swing these last full weeks, but as the weather heats up warm baked goods aren’t cutting it. Give these refreshing date bites a go if you're looking for a cool treat to satisfy your sweet tooth on these warmer days ahead.
Chocolate Almond Butter Date Bites
16oz Medjool Dates, pitted
½ tsp salt
¼ cup Almond Butter or Peanut Butter
1 cup Chocolate Chips
1 Tbsp Coconut Oil (melted)
1.) Pitt dates first, add dates and salt to a food processor. If the mixture isn’t combining, add a little water to the mixture. If dates aren’t super sticky and super moist, soak them in a bowl of warm water for 5-10 minutes to allow them to soften.
2.) Take about a tablespoon of the date mixture and form small balls and place on parchment paper. Place in the freezer for 15-20 minutes.
3.) Combine Almond Butter and 1/2 tbsp coconut oil and microwave for 10-20sec or until liquid form. Take dates out of the freezer and drizzle almond butter mixture over the top of the date balls. Place back in the freezer for 15-20 minutes.
4.) Combine Chocolate Chips and 1/2 tbsp spoon coconut oil and microwave for 1 minute, stir as needed. Using a folk, dip date ball into the chocolate so they are fully covered. Place the date ball on parchment paper. Repeat.
Place in the freezer for 30 - 60 minutes or until hardened and Enjoy!
5.) Store extra in freezer safe container in freezer to keep fresh. Makes about 20.
