Easy Meal Prep: Pork tenderloin w/ spaghetti squash, peppers and onions

New year new habits! Who else is meal prepping today or gearing up to meal prep this weekend? ⁠

Here is an easy meal prep meal to give a try if your new to the game or need another recipes to file away. ⁠

Pork tenderloin w/ spaghetti squash, peppers and onions - Topped with homemade bbq sauce ⁠

What you need:⁠

1 Pork tenderloin⁠

1 Spaghetti Squash ⁠

3 Bell Peppers⁠

1 Yellow Onion ⁠

How to Prepare:⁠

1.) Place pork tenderloin in crockpot on low for 4-6 hours. Add in spices of your choosing (apple cider vingar, pepper, salt, red pepper, chili powder, garlic). ⁠

2.) Place Spaghetti Squash in oven, set at 250 degrees, for 1 hours or until soft. Once done, let cool and cut in half to remove all seeds. ⁠

3.) While squash is cooking, saute onions and peppers in a pan on medium heat until onion becomes translucent. ⁠

4.) For the bbq sauce, I went with a homemade version, swipe right to the last picture for ingredients. I didn’t use any specific measurements I just added and tasted until the flavor was right. You can choose to experiment with these ingredients or use store bought if prefered. ⁠

5.) Once all ingredients are done, divide ingredients by desired portion into easy to store containers. I got 6 meals out of this recipe. Once done dividing, store and take as you go throughout the week. Easy, fast and delicious! ⁠
