We are still in pumpkin season, so here is a yummy breakfast option or mid-day snack that is sure to keep your pumpkin craving at ease.
Pumpkin Power Bites
1 Cups Rolled Oats
⅔ Cup Raisins
⅔ Cup Raw Pumpkin Seeds
¼ Cup Ground Flaxseed
½ Cup Canned Pumpkin
¼ Cup Raw Honey
¼ Cup Coconut Oil
1 tsp Pumpkin Pie Spice
½ tsp Salt
1.) Preheat Oven to 350.
2.) In a small bowl combine coconut oil and honey. Warm up so ingredients are in liquid form.
3.) In a separate bowl, combine oats, raisins, raw pumpkin seeds, ground flaxseed, pumpkin pie spice and salt. Next, add canned pumpkin, eggs and warmed coconut oil and honey and combine.
4.) Use a ¼ measuring cup to create equal size bites and lay out on a cookie sheet lined with parchment paper.
6.) Bake for 20 minutes or until lightly browned.
7.) Let cool and enjoy! Make sure to pack in an airtight container or store in refrigerator to keep fresh.
