Shepards Pie w/ Sweet Potato Topping
Ingredients: 1lb Lean Ground Beef 90/10 1 lb Lean Ground Turkey 99/1 6 oz Can Tomato Paste 2 Medium Carrots, peeled and shredded 1 Green Pepper, Chopped 1 Onion, chopped 1 tbsp Garlic Powder 1 tsp Chili Powder ½ tsp Rosemary ½ tsp Salt ¼ tsp Black Pepper
Sweet Potato Topping: 2 Sweet Potatoes, peeled and cut up 1 Tbsp Coconut Oil ½ tsp Chili powder ¼ tsp Salt
1.) Preheat oven to 375. 2.) Bake or steam sweet potatoes until tender. While they are cooking, in a skillet cook on medium heat, peppers, onions and carrots until soft and translucent. 3.) Add ground beef and turkey to your skillet and cook until meat is cooked through. 4.) Add tomato paste and seasonings to filling and simmer on low heat. While the filling is simmering, begin making the sweet potato topping. Add all the ingredients into a stand mix or mix on your own until they are combined and smooth. 6.) Transfer meat filling into a glass 15 x 10 glass baking dish or a large size casserole dish that you have on hand. Add sweet potato topping on top of meat filling and spread out evenly. 7.) Bake for 10-15 mins and cool to enjoy!
