Spinach and Ham Frittata with sauteed red peppers and onions
The number 1 meal that I get asked constantly on how to meal prep for is breakfast. About 90% of the time I prep this recipe for breakfast because it's not only easy and versatile, but it stays fresh for up to 2-3 days in the fridge for a perfect meal prep option. Change up the recipe by switching out the ham for bacon or sausage. Maybe opt to trade out the peppers and onions for tomatoes and mozzarella or some asparagus and mushrooms. There are a variety of meat and veggies combos you could do so be sure to try it out!
Ingredients: 6 Eggs 1-16oz Carton Eggs Whites 5 oz Deli Ham 1 Red Pepper 1 Onion 2 Cups Spinach Pinch of Salt & Pepper
1.) Preheat oven 375. 2.) Cut up pepper and onions and sauté on medium heat in iron skillet or oven safe pan until the onions become translucent and veggies begin to brown. 3.) Cut up deli ham and spinach and add to skillet. 4.) In a bowl, whisk eggs and egg whites then add to skillet. 5.) Immediately place skillet in the oven for 20-30 minutes or until eggs are cooked all the way through. 6.) Let cool and pack in your meal prep containers for a delicious breakfast throughout the week.
